The cupcakes are edible enough on their own but add some icing and they're irresistable.
For 12 cupcakes, you will need:
200g icing sugar
8 tsp medlar syrup (or half and half with warm water)
Measure the icing sugar into a large bowl. If it's a bit lumpy then you can sift it, alternatively, make this a couple of hours before you need it as the sugar lumps will dissolve if left out at room temperature.
Stir in the medlar syrup/water, one teaspoon full at a time. Stop adding the syrup when the icing has reached the consistency that you like.
